This is my husbands absolute favorite meal, I am not sure the origin of this recipe, but its been handed down to us in a family recipe book from my husbands side of the family and he asks for it all the time. It’s called hot dish because it’s made with hot Italian sausage, but it also has lots of other veggies and is served over rice.
Ingredients
- Package of hot Italian sausage, or mild Italian sausage if you prefer
- 1 package of mushrooms
- 1 zucchini
- 1 can diced tomatoes
- 1 bell pepper
- 1 onion
- 1 clove of garlic, or minced garlic
- Parmasean cheese
- White Rice for serving
Directions
You will need a large skillet pan, cutting board, knife, and string spoon. Lastly a casserole dish to bake and serve.
Fill the skillet with about 1/2 inch of water, place Italian sausage in the pan and over the stove top on medium heat. Cook sausage until no longer pink on the outside, then turn over to cook other side. While the sausage is cooking, chop up the onion, bell pepper, zucchini, and mushrooms.
Once sausage is cooked, transfer the sausage onto a cutting board. Dump the water carefully, return the skillet to the burner, adding olive oil and the pepper and onion. Cooking the onion until almost translucent.
While the onion and pepper and cooking. Cut the sausage into 1 inch slices.
Next add the cut up sausage back into skillet with onions and peppers. Then add zucchini, mushrooms, can of diced tomatoes, (I really like fire roasted tomatoes) and garlic. I use minced garlic because I add garlic to a lot of my dishes and it’s just super easy and convenient to use minced. I also add in some spices now. salt, pepper, and Italian seasoning is what I use in this dish, but feel free to add whatever else you’d like.
Mix everything in the skillet and cover, leave over low-medium heat for about 3 minutes.
Next you will transfer this into a casserole dish. sprinkle generous amount of parmasean cheese on top.
Bake at 350 F for an hour. The cheese will darken and crisp up adding a nice flavor and texture to it. If you don’t want the cheese to darken and just melt, you can always add it in the last 15 minutes, or put aluminum foil over the top of the casserole dish. There will also be a fair amount of liquid at the bottom of the dish when you scoop it out, which flavors the rice really well.
This serves about 4 adults. You can always double it to fill out the casserole dish. It refrigerates really well and is even better the next day.
