The Best Banana Bread Recipe
This banana bread recipe is really moist with a wonderful crusty top. This is my husband’s favorite, so I make it quite a lot. I love all the different variations you can add to it too. It’s perfect for a quick breakfast, a desert after lunch, or a wonderful snack with coffee in the late morning.
Ingredients
3 ripe bananas
2 eggs
½ cup sour cream (i have also used Greek yogurt, both work well)
1 tsp vanilla
1 cup sugar
1 tsp baking soda
2 cups flour
optional 1 cup mini chocolate chips
Additional options are to add ½ cup shredded coconut, and or walnuts for some added texture and flavors that go really well together.
Directions
Preheat oven to 350 F
Mash up your bananas in a large mixing bowl.
Add eggs, vanilla, and sour cream or greek yogurt, I know I’m more likely to have greek yogurt in my fridge over sour cream, both work really well. Mix until everything is incorporated.
Add sugar
Then add flour and baking soda. Mix well.
Lastly add chocolate chips, walnuts, and or shredded coconut. I love these mini chocolate chips because I think it distributes the chocolate perfectly. I’ve also done shredded coconut and dark chocolate chunks with some brown sugar on top right before it goes in the oven to make the top nice and crisp and sweet. You really can’t go wrong with whatever you choose. It’s also delicious plain.
Butter or spray bread pan then pour mix into dish.
Bake at 350 F for 1 hour and 10 minutes.
